Pizzza... Does it get any better? This week Shelly is sharing her recipe for pizza muffins, or pizza pockets, or pizza whatever... The name has changed throughout the years but what hasn't changed is the simplicity of the recipe. Stuff these with any of your favorite ingredients. It's very easy to hide veggies in these because kids are paying attention to the crust and cheese. Make these on Sunday, store in a container for the week, and warm them right before packing them in their lunch box. The original recipe was made with store bought pizza dough but has been elevated over the years with homemade dough. I love the pizza dough recipe from Planner Perfect Meals. Prepared pizza dough
Italian sausage, casing removed
Half small yellow onion, chopped
Half zucchini, chopped
Cup of spinach, chopped
1/4 cup mushrooms, chopped
Shredded cheese, any kind you have on hand
Preheat oven to 400. Separate the dough into twelve equal pieces. Stretch the dough just enough to cover the muffin cup of a sprayed muffin pan.
Crumble and brown the sausage. Add the next four ingredients and cook for two minutes until the spinach wilts. Add a spoonful of sauce to each muffin. Add the sausage and veggie mixture. Top with shredded cheese. Bake on 400 for 15-20 minutes, until golden brown and crispy on the outside.
