The moment Shelly's coworker, Stacy talked about her stuffing, she knew it had to be featured in our friendsgiving series. Stacy makes a decadent stuffing by adding mozzarella and pepperoni. Yeah... She originally found a version of this recipe on Food Network but has made it her own throughout the years. We hope you try and enjoy this killer stuffing recipe!

Stacy's recipe:

1 stick of butter

1 large white onion

2 stalks celery

1 bunch fresh thyme

1 bunch fresh rosemary

1 loaf white sandwich bread

1 tube of loose pork sausage

1 bag diced pepperoni

1 block of mozzarella cheese (not the fresh kind, the block kind you would shred)

1 container low sodium chicken stock

Instructions:

Melt butter in deep skillet over medium heat. Saute diced onion and celery until tender. Add finely chopped thyme and rosemary (I do about two tablespoons of each). Once combined transfer to a large bowl.While veggies are cooking dice up entire loaf of sandwich and toast in the oven on baking sheets til lightly browned. Add bread to bowl with veggies.

In same skillet as veggies, saute the sausage until browned and crumbly, add to bowl. Saute package of diced pepperoni, add to bowl. Mix everything together with chicken stock, I end up using almost the entire container, it should be moist, but not mushy. Add salt and pepper to taste. Diced up 2/3 of the block of cheese to small cubes and mix into stuffing. Transfer to 9 by 13 pan or casserole dish. Refrigerate until you're ready to bake it. Bake at covered at 375 for approx. 1 hour. At the 45 minute mark, remove the foil.
