While we aren't vegetarian, we do our best to incorporate meat free meals throughout the week. We believe that balance and moderation are key! This super quick Hash is a great meal, particularly toward the end of the week when you might find yourself low on ingredients, or out of ideas. A tasty, fun dish to eat, no one would be the wiser that you didn't plan ahead! Cheesy White Bean and Kale Hash

  Cheesy White Bean and Kale Hash

1 bunch kale, chopped into about 1 inch pcs

1 15 oz box/can cannellini beans

1/2 medium red onion sliced thin

1 clove of garlic, minced 

1 cup frozen sweet yellow corn

2 Roma tomatoes, diced

2 stalks celery, diced (optional)

3-5 oz cheddar cheese, shredded

1/2 tsp cumin

Dash of red pepper flakes (optional)

Salt and Pepper to taste

1-2 tbls olive oil

Greek yogurt or sour cream for serving.

Heat olive oil over medium heat. Add onion and celery. Sauté about 2-3 minutes. Add garlic and sauté about another minute. Add tomatoes. Season with a little salt and pepper (not too much, as you'll be seasoning again). Add kale, beans and corn. Add cumin, pepper flakes and just a little more salt and pepper. Continue to sauté until kale is wilted to your liking. Add in cheese and stir.  Serve with tortilla chips and Greek yogurt or sour cream. Enjoy!
