Baked Avocado and Eggs

So Saturday morning started as it always does, "Mommy what's for breakfast?". This time Shelly was more than prepared and actually excited that she didnt get to sleep in as late as she wanted. A trip to the grocery store on Friday evening prepared her to make baked avocado and eggs, a recipe she had been eyeing for a couple days. Over ripe bananas were also calling her name(blog post to come). In the kitchen she goes only to find a missing avocado... How does an avocado go missing? After checking her trunk she realized that baked avocado and eggs wasnt going to happen for everyone. That being said, she decided that she could still have it but she needed to create another recipe for the girls to make the other half of the avocadostretch. Along came a cheddar and avocado frittata! Check out both recipes below, including a chimichurri sauce that topped each dish


1 avocado

2 large eggs

Crushed red pepper, cumin, salt, and pepper- all to taste


1. Preheat the oven to 375. Slice the avocado in half and remove the seed. Spoon out about a half inch of avocado from the middle- enough to hold an entire egg.

2. Move to a small baking dish. Season the avocado with salt and pepper.

3. Crack an egg into the avocado. Season with cumin, crushed red pepper, salt, and pepper- all to taste.

4. Bake on 375 for 15 minutes or until the eggs are set to your liking.

5. Enjoy!

Avocado Frittata


4 large eggs, lightly beaten

1 avocado, sliced

2 cloves of garlic, minced

2 scallions, chopped

Crushed red pepper, cumin, salt, and pepper- all to taste

1/2 cup cheddar cheese

Baking Spray


1. Preheat an oven to 350.

2. Mix the eggs, avocado, garlic, scallions, and seasonings.

3. Spray two mini pie pans or medium ramekins. Pour half of mixture in each pan and top each with half of the cheese mixture.

4. Bake on 350 for 20 minutes or until set and cheese is golden brown.
