We made these veggies to accompany our Lamb Kofta recipe. They will compliment any protein that needs a flavor enhancement. The spices also make this a great anti-inflammatory side dish for anyone suffering from inflammed joints. Enjoy!  

Indian-Spiced Roasted Veggies

1 lb brussel sprouts, sliced in half (or quarters if they are very large)

1 lb carrots, peeled and sliced on an angle in 1/2 inch pieces

2 tablespoons olive oil

1 tablespoon dried turmeric

1/2 garam masala

2 garlic cloves, chopped

salt and pepper, to taste


1. Preheat the oven to 400

2.  Lay the veggies on a baking sheet. Coat in olive oil.

3. Season the veggies with the turmeric, garam masala, garlic, salt and pepper.

4. Roast for 20 minutes, until charred.

5. Enjoy with our lamb kofta curry!
